Recipes to Love: Carla Hall’s Pimento Cheese

I was recently gifted Carla Hall’s Soul Food: Everyday and Celebration cook book. I’ve never had Pimento Cheese. However, I decided to give it a go - it was love at first dip! This Pimento Cheese recipe was so good, I needed to share.

These days, nothing feels better and more safe than to pack a bag and head outside to enjoy a picnic in the comfort of your own yard. Quick finger foods are ideal for a backyard picnic, so you can relax and enjoy as much time outdoors as possible. I’m currently loving the many recipes in Carla Hall’s Soul Food book.

What You’ll Need


A bag or basket to get everything outside A picnic blanket

An easy lightweight outfit to keep you cute & cool under the sun A water bottle to stay hydrated


Recipe


2 garlic cloves, grated

1 roasted red bell pepper, peeled, seeded and chopped

4 oz cream cheese, softened

1/2 cup mayonnaise

1 tsp cayenne pepper

1/2 tsp kosher salt

2 cups sharp cheddar, grated

2 cups Monterey Jack cheese, grated



Combine the garlic, bell pepper, cream cheese, mayonnaise, cayenne pepper, and salt in a stand mixer bowl. If you don’t have a stand mixer, you can use a bowl and stir by hand with a spoon. Beat or stir until the ingredients are well mixed. Add the cheddar and Monterey Jack cheese and beat or stir until the cheese is evenly distributed.

Transfer the cheese mix to a bowl with a lid, sit it in the fridge for at least an hour to allow the garlic and flavors to disperse throughout the cheese mixture.


Use within a week.


Check out the book for Carla Hall's biscuit crackers recipe. However, you can enjoy this cheese mix with any crackers. I prefer Club crackers. Of course, don’t forget to treat yourself to a refreshing wine from Winc.
